A unique project in the world of Champagne, Chavost is a boutique producer located south of Épernay. Under the direction of young winemaker Fabian Daviaux, the domaine has transitioned to a radical "no added sulfur" philosophy for its flagship range. Farming 5 hectares organically, they produce "natural" Champagnes that are remarkably clean, vinous, and expressive.

The wines, such as the "Blanc de Blancs" and "Blanc d'Assemblage," are fermented with indigenous yeasts and bottled without dosage or filtration. This approach offers a raw and pure look at the terroir of the Coteaux Sud d'Épernay, resulting in Champagnes with a unique energy, creamy texture, and vibrant fruit profile.
