Domaine de la Cras is a unique 160-hectare agricultural property owned by the City of Dijon, with 8 hectares currently under vine. In 2014, Marc Soyard was selected to lead the estate after a competitive search for a young winemaker without a family domaine. Marc previously spent six years at the legendary Domaine Bizot in Vosne-Romanée, where he mastered a "hands-off" natural winemaking philosophy.
The estate is the only producer permitted to use the Coteaux de Dijon designation. It produces two primary cuvées: "Coteaux," from lower-altitude vines, and "Cras," from steeper, better-exposed plots. All vineyards are farmed organically with biodynamic practices. In the cellar, Marc uses whole-cluster fermentation, natural yeasts, and minimal sulfur, often experimenting with different wood types like chestnut and acacia to create wines of exceptional energy and character.
